Hot Pot
Oh my …. if you have not yet tried hotpot it is time to jump on that bandwagon. Hot pot is a communal cooking experience that originates from East Asia, where diners gather around a bubbling pot of simmering broth. Ingredients such as thinly sliced meats, fresh vegetables, and various noodles are dipped into the broth, allowing them to cook quickly and absorb the flavorful essence of the soup. The social aspect of hot pot is emphasized as friends and family share the meal, choosing their ingredients and cooking them to their liking. Various dipping sauces and condiments enhance the flavors, making it not just a meal but a delightful culinary adventure that encourages conversation and connection.
This past weekend my mom encouraged us all to try a new dish- it was Duck fermented tofu hotpot. It was a cooking adventure for us all. And it was delicious.

For a simpler, lower-calorie recipe, use more vegetables and omit the duck. Lemongrass, ginger, and fermented tofu provide strong flavors, making meat unnecessary.
Tofu adds protein, texture, and nutrition. Incorporate veggies like bell peppers, mushrooms, or leafy greens for volume and nutrition without excess calories.
Chop vegetables into small pieces for quicker cooking and improved flavor. Marinate the tofu in herbs and spices for added taste, keeping the meal light yet flavorful with more veggies.
