Lemon Butter Beans

This week I’m trying to add more beans to my diet. I’ll try butter beans first.

Lemon Butter Bean Recipe

Ingredients

  • 1 can (15 oz) butter beans, drained and rinsed

  • 2 tablespoons olive oil

  • 1 lemon (zested and juiced)

  • 2 cloves garlic, minced

  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish)

Instructions

1. Heat Olive Oil: In a medium skillet, heat the olive oil over medium heat.
2. Sauté Garlic: Add the minced garlic to the skillet and sauté for about 1 minute, or until fragrant. Be careful not to let it burn.
3. Add Butter Beans: Stir in the drained butter beans and cook for about 3-4 minutes, allowing them to heat through.
4. Add Lemon: Mix in the lemon juice and zest, along with the fresh thyme. Season with salt and pepper to taste.
5. Cook and Combine: Continue to cook for another 2-3 minutes, stirring occasionally until the beans are well coated and heated through.
6. Serve: Remove from heat and garnish with chopped parsley before serving.

Serve these lemon butter beans warm as a side dish or as a protein-packed addition to salads or grain bowls.
